Iron Boosting Pesto

Want a pesto that gives a boost to your iron & energy?

Do you struggle with low iron & fatigue?

Iron levels can be affected by intake, blood loss or poor absorption.

Chronic stress can also mean lower iron. The hormone hepcidin increases with longer term stress & this blocks iron absorption. So stress is also important to work on, alongside good nutrition.

Also if you have gut issues, you may not absorb iron as well due to iron being absorbed in the small intestine.

This pesto is higher in iron than your traditional pesto due to the addition of parsley and pumpkin seeds. The vitamin C from the lemon facilitates its absorption.

But most importantly it’s also delicious!

3/4 cup basil

3/4 cup parsley

1/4 cup pumpkin seeds (toasted in a dry frypan)

1/2 cup raw cashew nuts

1 tbsp nutritional yeast

1 clove garlic

Zest & juice of 1/2 lemon

1/4 cup extra virgin olive oil

1/2 tsp salt

  • Blitz all ingredients in a high powered blender.
